Corn and Avocado Salsa



Corn and Avacado Salsa is one of my 'go to' potluck dishes.  It's one of those recipes that's so easy and looks yummy so people eat it.  Actually the only bad part of taking it to pot lucks is there are NEVER any leftovers so I never get to bring any home.

I always get asked for the recipe so here it is!  ENJOY!




Corn and Avocado Salsa

1 can corn, drained
1 can black beans, rinsed
4 green onions, sliced
2 avocados, cut into small pieces
1/2 bunch cilantro, chopped
2 jalapeno peppers, seeded, deveined, chopped
salt to taste
1/2 bottle zesty Italian salad dressing

Combine all ingredients in a large bowl and refrigerate for 1 hour.  Serve with tortilla chips.  I love scoops because you can get a big yummy bite of the salsa.



Anyway, take this to your next potluck or butter yet, make it for your family.  There won't be any leftovers!!

Orange Creamsicle Cupcakes

I don't know about you but we are REALLY looking forward to summer coming to Utah! One of my favorite memories of summer is Orange Creamsicles. I mean, what's better than a popsicle with ice cream in the middle?! My mom would buy them each summer and boy were we happy campers. 

 Well, it's not quite warm enough for popsicles here but I came up with a really yummy and simple way to make Orange Creamsicle Cupcakes. They taste as yummy as they look!
 

Here's what you need:

White cake mix
3 eggs
1 C. water
1/3 C. oil
1 1/2 tsp. orange extract
zest from 1 orange

Mix all ingredients together and bake cupcakes.  Let cool completely.

For the frosting:

8 oz cream cheese
1 stick butter
1 tsp. vanilla
3 C. powdered sugar
8 oz. whipped cream

Cream the cream cheese and butter together.  Add vanilla and powdered sugar.  Gently fold in the whipped cream.

Now the fun part.  Cut off the top of each cupcake



 Use a cupcake corer and core each cupcake


Place your frosting in a piping bag, fill the center hole in the cupcake


Pipe more frosting over the rest of the cupcake


Place the top back on the cupcake



There you have it!  Delicious Orange Creamsicle Cupcakes.  The frosting is addictive so be careful!

Homemade Egg Rolls with Sweet and Sour Sauce

One of my favorite Chinese foods is egg rolls.  They are so yummy!  I just can't eat Chinese food with out a couple egg rolls.  A few years ago my favorite Chinese restaurant stopped making their own and started serving re-heated egg rolls.  I couldn't believe it!  I was so upset I decided I was going to figure out how to make my own.  I've been making my own ever since.

They are so easy to make!  Really, they are!  I thought I would share my recipe with you so you could enjoy them too.



Here's what you need:  For Egg Rolls (makes about 15 depending on how full you fill them)

1 lbs ground pork
1 carrot, grated
4 green onions, sliced
1 small cabbage, shredded
2 tsp. ground ginger
3 Tbs. Soy sauce
1 pkg. egg roll wrappers
oil for frying


Here's what you need:  For Sweet and Sour Sauce

1/2 C. sugar
1/3 C. vinegar
2/3 C. water
1 1/2 T. corn starch
4 T. catsup



In a large skillet brown the ground pork.  Add the ginger and soy sauce and stir.  Then add the carrot, green onions, and cabbage.  Cook until veggies are tender. Turn off heat.


Here's what your filling should look like.

Now, follow the directions on the egg rolls package for forming the rolls.  Heat your oil in a fry pan while you form the rolls.


Fry the egg rolls in the oil until golden brown.


Don't they look so yummy!

Add all the sauce ingredients to a sauce pan and cook on medium heat until it's thick and bubbly.  Serve with the egg rolls.

That's it, simple right?!
